Beatrice’s Cinnamon Macadamia Cookies

Macadamia Nut Cookies

Ingredients:

  • 1 stick (4 ounces) butter, softened
  • ¾ cup sugar
  • ¾ cup firmly packed brown sugar
  • 2 teaspoons vanilla extract (or seeds scraped from a vanilla bean)
  • 2 eggs
  • 2 ¼ cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt (omit if macadamia nuts are salted)
  • 1 cup coarsely chopped macadamia nuts
    plus additional whole macadamia nuts (optional)
  • 1 ½ cups chocolate chips (optional)

Directions:

  1. Preheat oven to 350°F. Lightly grease a cookie sheet, or line it with parchment paper or a silicone mat.
  2. In a large bowl, beat butter and both sugars together until creamy. Beat in eggs, one at a time, and vanilla.
  3. Gradually beat in flour mixed with cinnamon, baking soda, and salt. Stir in chopped nuts (and chocolate chips, if desired).
  4. Drop dough by rounded tablespoonfuls 2 inches apart onto prepared cookie sheet. If you like, press a whole macadamia nut into center of each cookie.
  5. Bake 10 to 12 minutes, or until just lightly golden brown. Let cookies cool a few minutes on cookie sheet, then remove to rack and let cool completely. Store in a tightly covered container.

Makes about 3 dozen.
