Beatrice’s Cinnamon Macadamia Cookies

Ingredients:
- 1 stick (4 ounces) butter, softened
- ¾ cup sugar
- ¾ cup firmly packed brown sugar
- 2 teaspoons vanilla extract (or seeds scraped from a vanilla bean)
- 2 eggs
- 2 ¼ cups flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt (omit if macadamia nuts are salted)
- 1 cup coarsely chopped macadamia nuts
plus additional whole macadamia nuts (optional) - 1 ½ cups chocolate chips (optional)
Directions:
- Preheat oven to 350°F. Lightly grease a cookie sheet, or line it with parchment paper or a silicone mat.
- In a large bowl, beat butter and both sugars together until creamy. Beat in eggs, one at a time, and vanilla.
- Gradually beat in flour mixed with cinnamon, baking soda, and salt. Stir in chopped nuts (and chocolate chips, if desired).
- Drop dough by rounded tablespoonfuls 2 inches apart onto prepared cookie sheet. If you like, press a whole macadamia nut into center of each cookie.
- Bake 10 to 12 minutes, or until just lightly golden brown. Let cookies cool a few minutes on cookie sheet, then remove to rack and let cool completely. Store in a tightly covered container.
Makes about 3 dozen.
